Energy bites are absolutely amazing in taste and texture. Enjoy them as a snack or with a cup of Solberry Seabuckthorn Tea.
Recipe Solberry Energy Bites with Seabuckthorn Leaf
1-½ cup (150 g) ground nuts such as walnut, pecan, cashews; seeds such as pumpkin, sunflower
4 tbsp. (8 g) dried Solberry leaves
1/2 cup (50 g) flour (for gluten free, mix equal amounts of chickpea and rice flour)
1 tsp. cinnamon
1 tsp. vanilla
3-4 tbsp. (30-40 g) coconut oil
Pinch of sea salt
1/2 cup (50 g) dry fruits of your choice like cherry, apricot, ginger, mango
Save the leaves from your evening Solberry Seabuckthorn Tea and grind them finely after letting them dry overnight. Seabuckthorn leaves are very high in antioxidants like polyphenols and flavonoids. It is an excellent source of protein (18% complete protein), fibre, plant sterols and, serotonin.
Soak nuts and seeds overnight. Drain water and grind.
Blend in finely ground dried Seabuckthorn leaves, flour, coconut oil, egg, cinnamon, vanilla and salt. Add 1/2 cup of your favourite dried fruits such as tart cherry, apricot, ginger, mango, cranberry. Form into 2 inch balls, and place on parchment lined sheets.
